The elegant, complex spice aromas of this natural-processed coffee from Elida Estate have earned it raves from Coffee Review, where it is described as one of the world's best "new naturals". Notes of cinnamon and cardamom, ripe stone-fruit sweetness and suggestions of chocolate are complemented by a syrupy mouth feel and an intense fruit character of Casaba melon, plum and nectarine.
Elida Estate has consistently proven itself to be one of the most innovative coffee producers in Panama. By drying the beans inside the fruit instead of after the fruit has been removed, unlike most coffees, Elida Estate allows the beans to take on a deeper fruit profile. This challenging process is excellently executed by Wilford Lamastus and his father at their property in the Boquete growing region of western Panama.
Cultivated at 1,600 meters, these typica and catuai beans have an amazing flavor profile that includes sweet notes of pineapple, lemon and berries, with a refined finish of toasted hazelnut and cedar. Purchase the 93 rated Elida Natural here.
Blind Assessment: Blind Assessment: Delicate but complexly opulent coffee: distinctly pineapple-like fruit, flowers, aromatic wood, hints of pipe tobacco and dark chocolate in both aroma and cup. Crisp, sweet-toned acidity, lean but silky mouthfeel, long, sweet, subtly flavor-saturated finish.
Notes: This coffee was dried in the fruit, an unusual procedure for a Panama coffee. From trees of the Typica and Catuai varieties of Arabica.

Produced by the award-winning Elida Estate, this is a dry- or "natural-" processed coffee, meaning the beans were dried inside the fruit rather than after the fruit is removed, as is the case with the wet-processed or "washed" coffees more typical of Panama and Central America.

Naturally processed coffees are particularly difficult to deal with because the producer is, in essence, allowing the coffee to ferment. This processing method can produce an exceptional flavor profile, but such a profile is only possible when extreme care is paid to every detail. We are proud to say that Wilford has done exactly that. In the cup, dark cherries and blueberries dominate its aroma. The first sip is incredibly sweet, with notes of pineapple, lemon and berries. Its finish is refined, with notes of roasted hazelnut and cedar.
