These incredibly small beans produce a delightful cup of dark chocolate essence with a slightly sweet-spicy scent. Since the coffee beans are dry processed, left in the fruit to dry in the sun and then hulled, this produces an exotic character to each bean, giving it a stronger and spicier flavor. When brewed, this Hawaiian Maui Mokka coffee deems lightly acidic and finishes with a crisp smoothness.
It wasn’t until just a few years ago that this rare coffee was revived on the Ka’anapali Plantation on the island of Maui. The Ka’anapali Estate is now comprised of 300 acres, in which 140 of those acres are dedicated to the growth of the exotic Maui Mokka. This plot of land is one of the few places in the world where Mokka coffee beans are grown. Mokka plants date back to at least 1,000 years ago and are said to have originated from both Ethiopia, the "birthplace" of coffee, and Yemen. This particular Mokka plant is a cultivar of the same variety found in Yemen.
The Mokka coffee plants produce light yields because some of the plants have alternate bearings, meaning one year they may produce heavy quantities and the next year may yield small or smaller quantities. The low yield is also accommodated by the fact that the coffee beans are extremely difficult to harvest with machinery. Since cultivation with specialized equipment proved unsuccessful, almost all of the beans are hand selected. Being harvested through manual labor provides the beans with extra care and more specialized treatment. After harvesting, the beans are dry-processed, meaning the coffee cherries are picked and immediately dried in the sun, enclosing each bean with a burst of citrusy flavor. Each bean is then carefully chosen and sorted depending upon quality. With all of these factors, Maui Mokka is very uncommon, but proves to be an extraordinary, specialty coffee.
