Centuries ago, wooden-hulled sailing vessels carried coffee from the Indian coast to the edges of Europe. During its half-year voyage, salty ocean spray turned the beans from green to yellow, and giving them a deep nutty, woody flavor. While steel-lined ships dominate the seas today, Malabar’s growers still rely on the weather to produce this unique brew, taking advantage of the monsoon’s wild, wet winds to give beans their signature flavor. Whatever the weather, we love its forest-floor earthiness and barely perceptible essence of cherrywood.
